I love Ratatouille! It’s so versatile and healthy, I make it in different variations.
The other day, I happened to have some of the ingredients in the fridge, and I made pasta with a ratatouille-ish sauce.
The key to Ratatouille is of course the use of Herbs de Provence. Not too easy to come by here in Japan, but I had bought a good batch on my last visit to Europe a while back. I keep it in the fridge to keep the aroma alive for as long as possible.
After making the Ratatouille sauce with the following ingredients,
- Fresh tomatoes
- Red onion
- Salt and pepper
- Herbs de Provence
- Red wine
- small amount of vegetable broth
I tossed it with penne and added Parmesan cheese and some Tabasco. It was very tasty, light, healthy and made for a balanced meal.
Normally, I also use different colored peppers and serve the Ratatouille with rice. But this pasta version works just as well. It also works as a oven baked casserole or as a hot sandwich…
