Pumpkin with minced chicken sauce

This is something I discovered a few years ago at one of those hotel breakfast buffets that serve both traditional Japanese and western foods. So this is more or less a recreation of it.
It’s pumpkin slices (boiled or in this case, microwaved) topped with a thick sauce made of minced chicken, a little bit of ginger, sake, white dashi and green onions, adding potato starch dissolved in water to give it a thick consistency. Then adding salt and pepper to taste, maybe a dash of soy sauce.
It’s delicious and light, not just for breakfast but as a side dish for any meal.
